Remove the blood from the chopped pork with a paper towel, and drain the soft tofu. Soak the dried gondre greens in water for about 12 hours.

Finely chop the soaked gondre greens. Stir-fry the prepared gondre greens, sesame oil (15g), and chopped garlic (15g) in a pan and cool. Mix warm brown rice with the stir-fried gondre greens to make gondre greens rice.

Mix potato starch, olive oil, lemon juice, and drained soft tofu in a blender, then stir-fry in a pan over low heat and cool.

In a separate pan, add cooking oil (20g), chopped pork, chopped garlic (15g), pepper (4g), ssamjang, and allulose and stir-fry, then cool.

Wrap the stir-fried pork in the stir-fried soft tofu, then add to the gondre greens rice and shape into a round. Coat with flour, egg, and bread crumbs in order, and deep-fry in cooking oil (180g) preheated to 180℃ for 1 minute to make arancini.

Boil soy sauce, sesame oil (15g), chopped garlic (5g), pepper (1g), and chopped green onion in a pan, then add starch water to adjust the thickness to make the sauce. Place the arancini in a bowl, drizzle with the sauce, and top with thinly sliced Korean melon to finish.
