🔍(Sauce) Chop all the sauce ingredients, sauté the onion first in an oiled pan, add the rest, then add water and simmer down.
🔍Add the dough ingredients and mix to the final stage at 27℃, then let the first proof rise at high temperature for 1 hour at 27℃.
🔍Divide into 150g portions, shape, and place on a cloth. ★ The dough is quite sticky. If it sticks to your hands, dust with extra flour as you work.
🔍Proof for the second time at 30℃ and 75% humidity for 60 minutes, then place on the oven pan.
🔍Spread the prepared tomato sauce on the dough and bake with steam at 160℃/230℃ for 13 minutes.
🔍Top with cheese and bake for 4 minutes.
