🔍Soak the dried jelly strips in warm water for about 5 hours, then boil in boiling water for 15 minutes and cool.
🔍Julienne the cabbage and carrot, and finely cut the chive.
🔍Add water (180ml) and all the soba broth ingredients to the pot and boil.
🔍Strain the boiled broth through a sieve and chill in the freezer to make soba broth.
🔍Grill the mackerel in an oiled pan, then add soba broth (5g), cooking wine (5g), citron syrup (5g), and water (30ml) and braise.
🔍Place the soaked dried jelly strips in a bowl and add cold soba broth. Top with the braised mackerel and the prepared vegetables to finish.
