
Boil raw bamboo shoots in rice water for 10 minutes, grind them in half lengthwise, and remove the lime stuck inside. If you do not have fresh bamboo shoots, use canned bamboo shoots by briefly blanching them in boiling water. It is easy to add water to the rice if you place the bean sprouts at the bottom of the pot. Since moisture comes from bamboo shoots and bean sprouts, adjust the amount of rice water to 2/3 of the usual amount.
