🔍Cut the potato into bite-size pieces; julienne the onion, carrot, and green onion long; chop the cheongyang chili; and wash the enoki mushroom thoroughly.
🔍Separate the egg into yolk and white, make egg garnish, and julienne.
🔍Soak the glass noodles in cold water for about 2 hours.
🔍Add anchovy to water (300g) to make broth, then add dried pollock fillet to steep once more for a richer broth.
🔍Add potato, carrot, onion, and glass noodles to the broth in order and boil, then turn off the heat and top with enoki mushroom to cook with residual heat.
🔍Season with chopped garlic, cheongyang chili, low-sodium soy sauce, salt, and pepper, then top with egg garnish, crown daisy, and green onion to finish.
