🔍Rinse the pork in cold water, add to the pot with water (300g), green onion, and ginger, and boil; once the pork is cooked, strain through cheesecloth.
🔍Add water (300g) to the pot, and once boiling, add bonito flakes and boil for 1 minute; turn off the heat, and once the bonito flakes sink, strain through cheesecloth. Add water (300g) again with the strained bonito flakes, boil over low heat for 10 minutes, and once the flakes sink, strain through cheesecloth.
🔍Mix the pork broth and bonito flake broth, set aside 200g, add the braising seasoning and boil, then add the pork and braise.
🔍Boil the ramen noodles, rinse in cold water, and drain; thinly slice the chive.
🔍Boil the broth hot, place in a bowl together with the ramen noodles, top with the braised pork and chive, and drizzle with the remaining braising sauce from the pan to finish.
