We used seafood, shrimp, to adjust the seasoning and reduced the use of sodium. I used king oyster mushrooms, which are rich in potassium, which helps excrete sodium. The chewy texture of king oyster mushrooms complemented the dull taste.

🔍Drain the tofu and mash with the back of a knife; finely chop the shrimp and onion; and cut the king oyster mushroom into bite-size pieces.
🔍Season the mashed tofu and finely chopped shrimp and onion, toss evenly, and tear off appropriate amounts (25g) to shape into rounds.
🔍Heat cooking oil (25ml) in a medium-heated pan and cook the tofu shrimp balls evenly for 10-15 minutes, then remove.
🔍Stir-fry the king oyster mushroom in the same pan for 5 minutes and remove.
🔍Lower to low heat, add butter and flour to the same pan, and stir-fry for 3-5 minutes to make a blond roux, pour in milk, and boil for 10 minutes.
🔍Add the grilled tofu shrimp balls, mushroom, salt (1g), and pepper (1g), plate, and sprinkle with parsley powder (2g).
