Soak the glass noodles in water, then chop the soaked glass noodles with eggplant, chive, and onion.
Beat the eggs well.
Add egg, the prepped vegetables, and pepper, and mix evenly.
Shape the batter into a 10cm oval in an oiled pan, and once half-cooked, fold to make a flat dumpling shape.
Boil whole tomato, bay leaf, and glasswort salt to make the sauce.
Drizzle sauce over the finished egg dumpling and garnish with parsley.
