Julienne the onion 5mm thick, diagonally cut the cheongyang chili and remove the seeds, and rinse the scallop thoroughly and season with pepper.
Mix milk and fresh cream evenly into the tofu to make tofu cream.
Heat cooking oil (1.5Ts) in a medium-heated pan, add scallop, and grill until opaque, then remove.
Heat cooking oil (0.5 Tbsp) in the same pan, sauté chopped garlic and onion, then add shrimp, littleneck clam, and cheongyang chili and stir-fry.
Add water (100ml) and boil until the clam shells open, add tofu cream, and once boiling, add scallop and cook for 3 minutes.
Place in a bowl, top with basil, and sprinkle with grana padano cheese to finish.
