🔍Coarsely chop the garlic and onion and stir-fry.
🔍Add the stir-fried garlic and onion to the chopped beef and pork, add salt, pepper, egg wash, bread crumbs, and starch, knead evenly, and let it age.
🔍Julienne the perilla leaf finely, soak in cold water until crisp, drain, and add to the aged meat.
🔍Shape the meat with perilla leaf into a 4cm-diameter hamburg steak and cook in a pan with olive oil.
🔍Boil dried chili, green onion, garlic, wine, low-sodium soy sauce, oligosaccharide syrup, and sugar in the pot, add chopped tomato (⅔ portion), simmer gently, and strain through a sieve.
🔍Slice the remaining tomato keeping its round shape and lay on a plate, top with the cooked hamburg steak, and place a soft-fried quail egg garnish on top of the hamburg steak.
