🔍Chop the garlic, and cube the onion, green bell pepper, eggplant, zucchini, and button mushroom into 1cm pieces.
🔍Blanch the tomato in boiling water, peel, deseed, and cut to the same size as the other vegetables.
🔍Peel the potato, cut into large pieces, boil, then once fully cooked, dry in the oven, mash, and add milk, fresh cream, salt, and pepper.
🔍Heat oil in a pan and stir-fry the onion until translucent, then add garlic and tomato paste and stir-fry, and add green bell pepper, eggplant, pumpkin, button mushroom, and tomato and stir-fry.
🔍Once the vegetables soften, add chicken broth and boil once more, and season with salt and pepper.
🔍Lay the finished mashed potato on a plate and top with vegetable stew.
